Cinnamon Buns

The best and also homemade cinnamon buns ever!

THIS is the right recipe you are looking for ~ gooey, soft, and fluffy buns.

Ingredients

  • Milk: 

    200 g

  • Egg: 

    2

  • Flour: 

    4 3/4 cups = 608 grams

  • Fresh Yeast: 

    25 g

  • Sugar: 

    50 g

  • Salt: 

    1- g

  • Butter: 

    200 grams

  • Filling - Butter: 

    150 g

  • Filling - Sugar: 

    250 g

  • Filling - Cinnamon: 

    2 1/2 tsp

  • Egg yolk for Egg wash: 

    2

  • Sugar glaze - Sugar: 

    100 g

  • Sugar glaze - Water: 

    100 g

  • Frosting - Butter: 

    50 g

  • Frosting - Powder Sugar: 

    50 g

  • Frosting - Cream Cheese: 

    200 g

  • Frosting - Vanilla Extract: 

    1 tsp

Directions

Start by making the dough:

  1. Break in the yeast into the warm milk. Set aside, let it dissolve.
  2. Mix together: flour, salt, sugar, butter, and eggs. Then pour over the milk mixture.
  3. Start mixing at a slow speed then increase to medium speed and mix for a further 10 minutes until the dough comes away cleanly from the side of the bowl.
  4. Cover and leave for around one hour or until double in size.

Meanwhile, let’s prepare the filling: Beat the butter and sugar together until pale and stir in the cinnamon. Set aside.

Right back to the dough: 

  1. Preheat your oven to 200°C.
  2. When the dough has risen enough lightly flour a work surface and roll the dough into a rectangle roughly the size.
  3. Spread the filling over the top of the dough.
  4. With the long side facing you, fold in half lengthways to enclose the filling and slice it widthways into around ~ 18-20 strips. Next, use a sharp knife to cut twice down the length of each strip to make three strands. Plait the three strands together and repeat until done.
  5. Take each plait and roll it up along its length to create a knot.
  6. Grease a 12 cup muffin tray and pop the knots into it. ( There is an easier and cleaner way: use muffin papers. )
  7. Cover and allow to prove for 1 hour.

Baking time: 

  1. Brush the knots with the egg wash.
  2. Bake for between 15-20 minutes until golden brown.

Meanwhile,

  1. Make the sugar glaze. Put the sugar and water in a pan and bring to a boil, turn down to a simmer until you have a light syrup.
  2. Brush the baked “little ones” with the syrup while still hot and leave to cool before devouring.

Optional! Cream cheese frosting: 

  1. Beat together softened butter, powdered sugar, vanilla extract until creamy, then incorporate the cream cheese.
  2. Once the cinnamon buns have been removed from the oven, spread the cream cheese frosting on them while they are still warm.
  3. Yummmm!
