Directions
Start by making the dough:
- Break in the yeast into the warm milk. Set aside, let it dissolve.
- Mix together: flour, salt, sugar, butter, and eggs. Then pour over the milk mixture.
- Start mixing at a slow speed then increase to medium speed and mix for a further 10 minutes until the dough comes away cleanly from the side of the bowl.
- Cover and leave for around one hour or until double in size.
Meanwhile, let’s prepare the filling: Beat the butter and sugar together until pale and stir in the cinnamon. Set aside.
Right back to the dough:
- Preheat your oven to 200°C.
- When the dough has risen enough lightly flour a work surface and roll the dough into a rectangle roughly the size.
- Spread the filling over the top of the dough.
- With the long side facing you, fold in half lengthways to enclose the filling and slice it widthways into around ~ 18-20 strips. Next, use a sharp knife to cut twice down the length of each strip to make three strands. Plait the three strands together and repeat until done.
- Take each plait and roll it up along its length to create a knot.
- Grease a 12 cup muffin tray and pop the knots into it. ( There is an easier and cleaner way: use muffin papers. )
- Cover and allow to prove for 1 hour.
Baking time:
- Brush the knots with the egg wash.
- Bake for between 15-20 minutes until golden brown.
Meanwhile,
- Make the sugar glaze. Put the sugar and water in a pan and bring to a boil, turn down to a simmer until you have a light syrup.
- Brush the baked “little ones” with the syrup while still hot and leave to cool before devouring.
Optional! Cream cheese frosting:
- Beat together softened butter, powdered sugar, vanilla extract until creamy, then incorporate the cream cheese.
- Once the cinnamon buns have been removed from the oven, spread the cream cheese frosting on them while they are still warm.
- Yummmm!
