Ingredients

Coconut Oil: 
1/2 cup = 125 ml

Coconut Sugar: 
1/2 cup = 100 grams

Egg:

Vanilla Extract: 
1 teaspoon

Chickpea Flour: 
1 1/2 cups = 140 grams

Baking Powder: 
3/4 teaspoon

Dark Chocolate: 
3 1/2 oz = 100 grams

Salt: 
a pinch
Directions
Bake Bake Bake Bake Bake Them!
- Preheat oven to 180 degrees C.
- Line a large baking sheet on the baking pan and set aside.
- In a large bowl mix together melted and cooled coconut oil, coconut sugar, egg, and vanilla extract until smooth and creamy. Make sure your coconut oil is not HOT!!
- In a medium bowl, whisk together chickpea flour, baking soda, and salt.
- Add dry ingredient to wet ingredients until well combined.
- Fold in chocolate chunks.
- Form your cute cookies.
- Bake at 180 degrees for 9-11 minutes or until edges are slightly golden brown.
- Allow cookies to cool completely.
