1/4 cup = 57 grams [cold]

2 cups = 256 grams

Directions
Biscotti = A cookie which edges are a lil’ bit crispy, and the center is a bit soft. Perfect for dunking in a cup of coffee, or even tea!
I just love it.
- Preheat the oven to 175 C.
- Beat the butter and sugar together until creamy.
- Add the eggs, almond extract, and vanilla extract. Mix until well-well combined.
- Mix together the wet ingredients with the dry ones: flour, baking powder, and salt.
- Stir in the chopped almonds.
- Divide the dough in half. Shape each half into a log that is about 20 cm.
- Place the logs on the prepared baking sheet. Use your hands to flatten the dough logs until they are about 1,6-2 cm thick.
- Bake for 20-22 minutes, until lightly golden and the center of the logs is almost firm.
- Let the logs cool on the baking sheet for 20 minutes.
- Use a sharp knife to cut the logs into biscotti shape, on the diagonal.
- Place the biscotti, cut side up, on the baking sheet.
- Bake for 12-15 more minutes.
