Almond Biscotti

Homemade Cookies all around.

Which is your favourite homemade cookie?

Biscotti Cookies are baked twice, which gives them their dry, crunchy texture.

Ingredients

  • Butter: 

    1/4 cup = 57 grams [cold]

  • Granulated White Sugar: 

    3/4 cup = 150 grams

  • Egg: 

    2

  • Almond extract: 

    1 teaspoon

  • Vanilla Extract: 

    1/2 teaspoon

  • Flour: 

    2 cups = 256 grams

  • Baking Powder: 

    1 teaspoon

  • Salt: 

    1/2 teaspoon

  • Almonds: 

    120 grams

Directions

Biscotti = A cookie which edges are a lil’ bit crispy, and the center is a bit soft. Perfect for dunking in a cup of coffee, or even tea!

I just love it.

  1. Preheat the oven to 175 C.
  2. Beat the butter and sugar together until creamy.
  3. Add the eggs, almond extract, and vanilla extract. Mix until well-well combined.
  4. Mix together the wet ingredients with the dry ones: flour, baking powder, and salt.
  5. Stir in the chopped almonds.
  6. Divide the dough in half. Shape each half into a log that is about 20 cm.
  7. Place the logs on the prepared baking sheet. Use your hands to flatten the dough logs until they are about 1,6-2 cm thick.
  8. Bake for 20-22 minutes, until lightly golden and the center of the logs is almost firm.
  9. Let the logs cool on the baking sheet for 20 minutes.
  10. Use a sharp knife to cut the logs into biscotti shape, on the diagonal.
  11. Place the biscotti, cut side up, on the baking sheet.
  12. Bake for 12-15 more minutes.

We are done! Time to eat ~
