Lemon Poppy Seed Muffins
I think everyone needs a go-to muffin recipe. Muffins are just so versatile, and they’re super easy to make! I was amazed when I first made them because they came out just Wow. Their texture was fluffy and easy, and the sides very little crunchy.
The poppy seeds make a funny noise at every chew!
Ingredients

Flour: 
3 cups = 384 grams

Granulated White Sugar: 
3/4 cups = 150 grams +2 tablespoon

Poppy Seed: 
2 tablespoon

Baking Powder: 
1 teaspoon

Baking Soda: 
1/2 teaspoon

Salt: 
a pinch

Yogurt: 
1 1/2 cups = 375 grams

Lemon juice: 
3 tablespoons

Lemon zest: 
1 1/2 tablespoon

Egg: 
2

Butter: 
8 tablespoon = 113 grams
Directions
Happy Baking:
- Heat oven to 190 C. Grease 12 muffins cup tins.
- Whisk flour, sugar, poppy seeds, baking powder, baking soda, and salt together.
- In a separate bowl, whisk yogurt, lemon zest, and eggs until smooth.
- Gently fold yogurt mixture into flour mixture until just combined. Fold in melted butter.
- Fill the muffin cups. Bake until golden brown and toothpick inserted in the center comes out clean, 20 to 25 minutes.
- Remove from the oven. Let muffins cool completely before serving.
Enjoy eating them with a cup of tea or coffee on a nice afternoon!
