Lemon Shortbread Cookies

This is One of those cookies which are actually really easy to make and tastes so goooood!
Classic buttery cookies with an upgrade of fresh lemon flavor!
Ingredients

Butter: 
1 cup = 227 grams

Granulated White Sugar: 
3/4 cup = 150 grams

Lemon zest: 
18 grams

Lemon juice: 
2 teaspoon

Vanilla Extract: 
1 teaspoon

Salt: 
1/4 teaspoon

Flour: 
2 cups = 256 grams
Directions
Everyone who has tasted these just loved them, so now it is your turn!
How to make:
- In the bowl cream together butter, sugar, lemon zest, and salt.
- Mix in lemon juice and vanilla extract.
- Add flour and mix until well combined.
- Scoop dough out and compress dough with your hands, be attentive, there should be no holes in the middle.
- Shape into a log on a lightly floured surface.
- Wrap in plastic wrap and chill at least 2 hours in the freezer.
- Preheat oven to 175 C degrees.
- Remove dough from the refrigerator and slice the log into slices.
- Transfer the slices to a baking sheet and bake until bottoms are lightly golden and cookies are set, about 12 – 15 minutes.
- Let cookies cool on the baking sheet.
- Let set then store in an airtight container at room temperature.
- Please! Don’t skip the chilling time so cookies will spread way too much. They will still spread some even after chilling, so if not chilled at all you might end up with pancakes.
