Fruit Rustic Pie

Ingredients

Flour: 
210 grams

Granulated White Sugar: 
2 tablespoon

Salt: 
1/4 teaspoon

Butter: 
150 grams

3 tablespoon

Fruits: 
600 grams

Cornstarch: 
1 teaspoon

Lemon juice:

Egg yolk for Egg wash:

Directions
Are You Ready?
We will start with the Pie Crust because it needs rest time.
Pie Crust:
- Mix together flour, sugar, and salt. Add the diced butter to the dry ingredients. Mix well.
- Drizzle with ice water, 1 tbsp at a time, until dough just comes together.
- Form the dough into a ball and place it on a piece of plastic wrap. Wrap in the plastic wrap and place in fridge overnight.
- If you are impatient, leave just one hour in the fridge. But one hour it’s a MUST!
Fruit Filling:
- Buy 600 grams of Fruits. Choose whatever you want. I love baking with seasonal fruits.
- Wash the fruits and slice them thinly. Place them in a large bowl and add juice, cornstarch.
- Combine all together, and set aside this bowl too.
Baking:
- Preheat the oven to 200°C.
- Take out the dough from the fridge, leave at room temperature for a few minutes. Roll out the dough to a large circle, about 25 cm.
- Transfer the dough to a baking sheet.
- Take the fruits, and arrange them nicely.
- Fold the edges over the fruits and press gently.
- Brush the edges with the egg wash, then sprinkle with sugar or almond flakes.
- Bake it for 30 minutes or until the crust is golden brown and the filling is bubbling.
- Let it cool completely.
Time to Eat! Serve simple, or with vanilla ice cream.
